Collannata is a village close to Carrara ( Tuscany ) and boasts a great gastronomic treat, the lardo di maiale ( pork fat). I know it may sound a little fattening ( and abviously it is) , but for the more “gastronomically adventurous” it’s definitely worth a try. The Lardo di maiale is prepared in a very particular way. Once the fat has been removed from the pig, it is placed inside a marble basin with salt, garlic, spices and rosemery and it sits for a period of time while the flavours mingle together.
